This fun Halloween treat is perfect for kids and adults. It’s just a basic Rice Krispies Treats recipe with with some red food coloring and a little bit of fondant dust powder.
I like to use more marshmallows than the traditional recipe. Usually the traditional Rice Krispies Treat recipe calls for about 10 oz of marshmallows, but I always buy the 16 oz bag and use the whole thing.

How do you make Rice Krispies Brains?
You’ll make the typical recipe, but you’ll add a couple extra steps to the process.
After you melt the butter and marshmallows, add a few drops of red food coloring to it. I usually ad about 5-7 drops. Then, mix it up just a bit, but not completely. You want to be able to see swirls of the pink coloring.
Then, you’ll add the Rice Krispies like you normally do, but we’ll leave them in the bowl for a minute or two to start to get sticky.
While you’re waiting, make up a baking sheet or two with parchment paper or wax paper.
Now it’s time to start scooping brains. I have a set of 3 metal scoops, and the biggest one, that I usually use for ice cream, was perfect to make scoops. For each brain, you’ll need 2 scoops. I make about 12 scoops at a time.
Next is the shaping of each brain half. I find the best way to do this is with your hands. To start, I spray my hands with nonstick oil spray, so the treats won’t stick to my hands.
Now roll each scoop between your hands to elongate it just slightly and flatten one side. They look almost like a jellybean shape.
Take 2 jellybeans and stick the flat sides together. This is when I look for any holes and try to shape and smush things around to fill them.
Lastly, I gently squish the front and back of the brain to make it look more like a brain and put it back on the baking sheet.
Those 12 scoops will make 6 brains. After making those brains, I move on and keep scooping and shaping until I’ve made all the brains I want.
This step is optional, but it makes them look a bit bloody. Let the brains dry for an hour or so before adding the fondant powder. Just take a food-safe paintbrush and dip it directly into the powder and brush into the center crevices and other crevices as desired.

Rice Krispies Brains
Ingredients
- 6 cups Rice Krispies cereal
- 16 oz mini marshmallows
- 3 tablespoons butter
- red gel food coloring
- Optional: red fondant dust
Instructions
In a microwave-safe bowl melt the butter in 30-second ingredients until it's completely melted.
Pour the marshmallows into the bowl and coat with the butter.
Melt in 30-second increments, stirring after each time, until the marshmallows are completely melted.
Add 5-7 drops of red food coloring. Stir gently just one or two times, so it's not completely mixed in.
Add the Rice Krispies and mix until they are completely coated in melted marshmallows.
Leave the bowl for a minute or two so the rice krispies treats can start to get sticky.
Make up a baking sheet with parchment paper or wax paper.
Use an ice cream scooper that is about 2.75 inches wide and make an even number of scoops. Set each scoop on the parchment paper. I make about 12 scoops at a time.
Spray your hands with non-stick oil spray, so the treats won't stick your hands. Now roll each scoop between your hands to elongate it just slightly and flatten one side.
Take 2 elongated scoops and stick the flat sides together.
Gently squish the front and back of the brain to make it look more like a slightly rounded brain and put it back on the baking sheet.
Optional: Let them dry for an hour or so before brushing on some fondant dust using a food-safe paintbrush.
Keep them covered in a sealed container so they don't get stale for up to 5 days.
