These are Super Duper Easy Easter Cupcakes made with edible Easter grass, and Peeps or chocolate bunnies You can even make them with store bought cupcakes.

You are going to love how these cupcakes come out because everyone will think you bought them. I sent some to my husband’s work, and they all thought we’d bought gourmet cupcakes.

Ingredients for these Easter Cupcakes
- Lindt Mini Chocolate Bunnies
- PEEP Marshmallow Chicks
- Whoppers Robin Eggs
- Chocolate cake mix (or your favorite chocolate cupcake recipe)
- Green frosting
- Edible Easter grass

How do you make these Super Duper Easter Cupcakes?
Make chocolate cupcakes from a box mix or your favorite chocolate cupcake recipe.
Once the cupcakes are baked, let them cool completely before decorating.
When the cupcakes have cooled, spread green frosting over the top of each one.
Take a few strands of edible Easter grass and use your fingers to GENTLY wrap it into a loop small enough to fit on a cupcake. Then, press it down into the frosting, just a tiny bit. This will take some practice. It took me about three times to get it to look right.

Choose either a PEEPs Chick or a Chocolate Bunny and set it in the center of the loop of edible grass.
Garnish around each Chick or Bunny with the mini Whoppers Robins Eggs. I stuck them slightly under the PEEP or as close to the chocolate bunny as I could. I put about 3-4 on each cupcake.

Can you make these cupcakes ahead of time?
Yes! I make them a day ahead of time and put them in a cupcake box in the fridge until they’re ready to go. They will keep just fine.
