After all the delicious fun I had making those wonderful Blueberry Cheesecake Bars a few weeks ago, I decided to keep going with the cheesecake bar idea.
Do you ever go to the Cheesecake Factory? I do love their food and most definitely the cheesecake, but we don’t go very often. The nearest one is quite a drive, and it’s a bit expensive for us. We usually save a trip there for a special occasion like our wedding anniversary.
However, my husband’s office is about 15 minutes away from it, so every once in awhile he’ll bring home slices of cheesecake like he brings home flowers. He’ll stop and buy us each a slice, which I hide from the kids. 😉 We’ll have a little date night and watch some grown up T.V. after the kids are asleep, enjoying our cheesecake together.
He usually gets banana cream cheesecake for himself and Adam’s Peanut Butter Cup Fudge Ripple for me. I love that cheesecake. It’s got peanut butter cups, chocolate fudge, and Butterfinger in it! So yummy and so rich, I can never eat more than a few bites in one sitting.
So after my success with making cheesecake bars, I decided to make another version as an ode to my fave at The Cheesecake Factory. I call them Peanut Butter Lover Cheesecake Bars.
They are definitely for the Peanut Butter Lover! They have chopped mini Reese’s and chopped Butterfinger Bites on top of chocolate ganache and peanut butter ganache.
Let me tell you….these are ah-mazing and nearly as rich. If you make these, don’t let the little size fool you. Be prepared to share!

Peanut Butter Lover Cheesecake Bars
Ingredients
For the Crust:
- 1 1/4 cups crushed chocolate graham crackers
- 4 tbsp powdered sugar
- 5 tbsp salted melted butter
For the Cheesecake:
- 16 ounces (2 packages) cream cheese, room temperature
- 1 cup granulated sugar
- 1/4 cup heavy cream
- 3 large eggs
- 2 to 3 tsp vanilla extract
- 1 teaspoon lemon juice
For the Chocolate Ganache:
- 3/4 cup semi sweet chocolate chips
- 1/2 cup heavy cream
- 2 tbs powdered sugar
For the Peanut Butter Ganache:
- 3/4 cup peanut butter
- 1/2 cup heaving cream
- 2 tbs powdered sugar
For the Toppings
- 1 pkg Reese's Peanut Butter Cup Minis
- 1 pkg Butterfinger Bites
Instructions
Prepare the crust:
- Preheat oven to 375.
- Layer the bottom of an 8 x 8 pan with parchment paper.
- Crush chocolate graham crackers
- Mix crushed graham crackers with sugar and butter.
- Press into pan.
- Bake for 10 minutes. Then, allow to cool completely.
Prepare the Cheesecake Batter:
- Lower the temperature to 325.
- Beat cheesecake and sugar together until light and fluffy.
- Then, add eggs, cream, vanilla, and lemon juice. Mix until smooth.
- Pour over the cooled crust.
- Bake for 40-50 minutes until cheesecake is "set."
- Cool in the fridge overnight.
Preparing the chocolate ganache:
- Pour cream into a microwave safe bowl. Mix in the sugar.
- Microwave for 30-45 seconds. Then, add the chocolate chips and allow to sit for a minute or two while the chocolate melts.
- Whisk it all together until smooth.
Preparing the peanut butter ganache:
- Pour cream into a microwave safe bowl. Mix in the sugar.
- Microwave for 30-45 seconds. Then, add the peanut butter and allow to sit for a minute or two while the peanut butter thins and softens.
- Whisk it all together until smooth.
Putting it all together:
- Chop the peanut butter cups and Butterfinger bites.
- Slice the cheesecake into 9 squares.
- Spoon over peanut butter ganache and then chocolate ganache over each square.
- Add a mixture of peanut butter cups and Butterfinger bites over the top of each square.
- Serve immediately or refrigerate up to a week.
