This Dorito Casserole is one of those comfort foods that just tastes good. It’s a bit like a Mexican lasagna since you’re creating layers of chips, meat sauce, and cheese.
It’s perfect for a busy weeknight meal or late night meal or a cold night or pretty much anytime you want.

What ingredients do you need to make Dorito Taco Casserole?
- 10 oz bag Doritos
- 16 oz Velveeta – cubed
- 15 oz can evaporated milk
- 1 lb ground beef
- 1 packet Taco Seasoning
- 1 can Ro-tel tomatoes – You can substitute salsa or even a can of diced tomatoes.
- 16 oz shredded cheese – cheddar, colby jack, Mexican, etc.
How do you make a Dorito Casserole?
Brown the ground beef in a skillet on high.
Then add 2/3 cup of water and the packet of Taco Seasoning.
Let that simmer on medium for a few minutes until the water has thickened up the taco seasoning.
Next, add the Velveeta and Rotel and keep stirring as the Velveeta melts.
When it’s mostly melted, add the evaporated milk and gently stir to combine all the ingredients.
When it starts to bubble, turn off the heat.
In a 9 x 13 pan, crush a layer of Doritos into small pieces – don’t make it dust.
Cover the Doritos with a layer of the cheesy meat sauce.
Sprinkle cheese over the top of the meat sauce.
Do these same 3 layers 2 more times:
- Doritos
- Cheesy Meat Sauce
- Cheese
If you have any meat sauce leftover, add one last layer of crushed Doritos, then pour over the leftover cheesy meat sauce.
Bake for 15 minutes.
Add cheese to the top and bake for an additional 5 minutes.
Let it cool before slicing it into squares.
Set out taco toppings for anyone to add to the top.
What kind of toppings for a Dorito Casserole?
Since this is basically nachos or tacos masquerading as a casserole, I put out taco toppings for everyone to add their favorites. Here’s a few ideas:
- lettuce
- tomatoes
- sour cream
- cilantro
- jalapenos
- salsa
- pico de gallo
- guacamole
What kind of substitutions can you make in this Dorito Casserole?
Here’s a few substitutions I’ve made when I’ve been out of some of the ingredients:
- Regular milk for evaporated milk
- A can of Cheddar Cheese Soup for Velveeta
- Ragu Cheddar Cheese Sauce for Velveeta
- Salsa for Ro-tel tomatoes
- Diced tomatoes & a can of green chilies for Ro-tel tomatoes
