What are the ingredients for Cilantro Lime Rice in the Instant Pot?
This recipe goes together fast because you use parboiled rice like Success or Minute Rice. Here’s what you need?
- 2 cups parboiled rice
- 2 cups of water
- Fresh cilantro
- 2 limes
- 1 tablespoon of garlic powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
What’s parboiled rice?
It’s a method of cooking. The rice is partially boiled while still in the husks. They used to do this to make it easier to remove from the husks, but nowadays they still do it because it keeps more vitamins and minerals in the rice.
I like to use it because it cooks really fast.
How do you make Cilantro Lime Rice in the Instant Pot?
Take 5-7 sprigs of cilantro. Fold them into themselves to make a clump and chop finely. Keep the stems and leaves altogether because most of the flavor is in the stems.
Add the rice, water, two wedges of lime, 2 tablespoons of chopped cilantro, spices, and water to the instant pot.
For parboiled rice, it’s a 1:1 ratio of water and rice. I have a big family, so I double this recipe and go with 4 cups of rice and 4 cups water.
Stir the ingredients.
Seal the lid and pressure valve. Cook at the rice setting or on HIGH for 12 minutes.
Quick release.
Squeeze the juice from the remaining lime and fluff the rice.
Serve with lime wedges and chopped cilantro as a garnish.
Can you make Cilantro Lime Rice in the Instant Pot ahead of time?
You can definitely make it up about 1-2 days ahead of time and reheat it in the microwave. However, personally, I like to make it fresh.
How do you store leftover Cilantro Lime Rice in the Instant Pot?
Keep in a sealed container in the fridge for up to 4-5 days.
Can you substitute anything for the Cilantro?
Many people are not a fan of cilantro. I am one of those people that have the genetics to make it taste like soap. So, if I make stuff with cilantro for the people in my family who love it, I make an alternative for the rest of us.
You can substitute parsley for cilantro.
