I love serving things on a stick at parties. They are usually a lot less messier, especially for kids.
For these Unicorn Cheesecake slices we used blue and purple candy melts, but you can totally change up those colors or even do a rainbow of colors for your candy melts.

What do you need to make Unicorn Cheesecake on a Stick?
You don’t need a whole lot, especially since the dessert is already mostly made for you.
Equipment
- Parchment lined baking sheets
- Popsicle sticks
- Microwave safe bowl or 2 cup liquid measuring glass
- Piping bags
Ingredients
- Frozen cheesecake cut into triangles
- Vanilla Almond bark
- 2-3 colors of Candy melts
- Sprinkles
How do you make Unicorn Cheesecake on a Stick?
The cheesecake MUST be frozen and sliced in order to do this. So you need all your supplies ready to go before getting the cheesecake out of the freezer and you must work quickly.
Line a baking sheet with parchment paper and set aside.
Place the almond bark in a 2-cup capacity glass measuring cup (or microwave safe bowl) and melt it in 30-second increments in the microwave. Stir after each time. Keep heating and stirring this way until the almond bark is smooth.
Pull out the cheesecake and slice it into 8 slices.
Dip the tip of a popsicle stick into the chocolate and then insert it into the frozen cheesecake. Do this for all the cheesecake slices.
Dip each slice of cheesecake into the melted chocolate and gently shake off any excess.
Place it onto the parchment lined baking sheet to set fully for about 10-15 mins. Do this for each cheesecake slice.
Add the colored candy melts to each piping bag and warm each one in 30 second increments in the microwave until fully melted.
Snip a small hole in the tip and drizzle over the hardened almond bark of the cheesecake slices.
Immediately add sprinkles to the top of the candy melt drizzle on each slice.
Let set for 10 mins.
Serve and enjoy!

Can be stored in the fridge for up to 3 days or freezer for up to 7-10 days.
Can you make the Unicorn Cheesecake on a Stick ahead of time?
You can definitely make these up ahead of time. I recommend making them up the day before and freezing them until an hour before ready to serve. Then, set them on the serving platter to thaw for about an hour before serving.
Can you use a cheesecake that’s not frozen to make Unicorn Cheesecake on a Stick?
You don’t have to purchase a pre frozen cheesecake. You can totally freeze your own cheesecake. You could also buy a refrigerated cheesecake, but it still needs to be placed in the freezer and frozen for this to work.
