I just love cute little individual desserts, especially if they’re colorful. Who doesn’t? I saw those little Entenmann’s mini pound cakes at the store and thought my no bake easy strawberry shortcake would be so cute in mini form. And, then I got the crazy idea to turn it into Unicorn Strawberry Shortcake with pretty colors.
You won’t believe how easy this is. And, your kids are going to love it!

What makes something a Unicorn Dessert?
Unicorn desserts tend to have a rainbow of colors and be covered in rainbow sprinkles. Mostly, they are pastel rainbow colors, but I’ve seen brightly colored rainbow treats called “Unicorn” as well.
There aren’t any rules. You can make your Unicorn treats in any rainbow you’d like.
How do you make Strawberry Shortcake?
Strawberry Shortcake is usually made with sponge cakes or biscuits nowadays. The cake is sliced in half, strawberries and cream are put in between the layers, and then another round of strawberries and cream on top.
Did you know old fashioned strawberry shortcake was sometimes made with pie crust? Sometimes it was whole round pieces and sometimes it was just broken pieces of pie crust and then layers of strawberry and cream. Doesn’t that sound lovely? I think I need to make this version, and soon!
When I make Strawberry Shortcake for a party, I usually make it as I serve it super quick. I get angel food cake, frozen sliced strawberries (thawed out), and Cool Whip or fresh whipped cream. Then, I put a slice of cake in a bowl, top it with strawberries, and add a dollop of cream.
How do you make the strawberries for Strawberry Shortcake?
Most often the strawberries are sliced up and a glaze is made. But, I have made strawberry shortcake many times with no sugar or glaze and just cut up fresh strawberries
Usually strawberries are sprinkled with sugar and allowed to sit. The sugar brings out the juices of the strawberries, so you’re basically creating the glaze that way. I find it’s best to do this the night before, so it has plenty of time to bring out the juice. But, a few hours is usually long enough.
Another way is to heat up some strawberry preserves and mix into fresh strawberries to create a glaze.
How do you make Unicorn Strawberry Shortcake?
These little Unicorn Strawberry Shortcakes are so easy to make. I like to use the Entenmann’s mini pound cakes. They are so light and fluffy, they almost remind me of angel food cake.
I use an 8 oz container of Cool Whip and just divide it into 3 bowls and color each bowl a different color. I like pink, purple, and turquoise. Those seem like the best unicorn colors to me.
I prefer to slice the strawberries and not use any sugar because I don’t want the strawberry juice running down and making a mess on my pretty colored Cool Whip.
Next, I slice the mini cake in half and start with the bottom layer. I add a pink stripe, purple stripe, and turquoise stripe of Cool Whip . Then, I layer the Cool Whip with as many strawberry slices I can fit.
Next, I put the top layer back on the cake and add three more stripes of Cool Whip. Then, I find the prettiest strawberries I can find to put one on top.
Lastly, we finish it off with rainbow sprinkles, white sugar pearls, and sanding sugar in one of the colors I used for the Cool Whip – pink, purple, or turquoise.

Unicorn Strawberry Shortcake
Ingredients
- 6 mini pound cakes
- 8 oz Cool Whip
- pink, purple, and turquoise food coloring
- 2 cups of strawberries, sliced
- rainbow nonpareils
- pink or blue sanding sugar
- white edible sugar pearls
Instructions
- Wash, hull, and slice the strawberries. Save 6 whole strawberries for the top.
- Separate the Cool Whip into three bowls.
- Use a few drops of food coloring to color each bowl a different color - pink, purple, and turquoise.
- Slice each mini pound cake in half.
- Add all three colors of Cool Whip to the bottom layer. Each color next to each other.
- Layer strawberries over the Cool Whip.
- Add the second layer of pound cake.
- Top the second layer in the same way with three colors of cool whip.
- Add a whole strawberry on top.
- Top with rainbow nonpareil sprinkles, sanding sugar, and sugar pearls.
- Serve immediately or chill for up to an hour in the fridge.
