These Biscoff Cookie Butter Marshmallow Bars are a twist on the cereal marshmallow bars you know and love. If you’ve tried our OREO cookie Marshmallow Bars and our Nutter Butter Marshmallow Bars, you are gonna love this new recipe.
They’re made with crushed Biscoff cookies mixed into melted butter and marshmallows, and they taste like cookie butter.
The best part of this recipe is that it’s totally no bake and has just a few ingredients. You melt the butter and marshmallows in the microwave and mix it all up and you’ve got a dessert that everyone will rave about.

What do you need to make these Biscoff Marshmallow Bars?
This takes just THREE ingredients!
- 2 8.8 oz packages of Lotus Biscoff cookies
- 16 oz bag marshmallows
- 4 tablespoons butter
I think that mini marshmallows melt the best in the microwave. The regular-sized ones tend to take a bit longer. So, I recommend the mini marshmallows when melting them in the microwave.
I found off brand Biscoff cookies that are almost identical to the real ones at the Dollar Tree! They’re only $1.25 package and they’re in a red package near all the cookies and called “Caramelized Biscuits.”
They’re even the same shape as the Lotus Biscoff cookies. I did a blind taste test with my family, and they could not tell the difference!
How do you make these Cookie Butter Marshmallow Bars?
Line an 8 x 8 pan with foil and spray it with non-stick oil spray.
Use a food processor or blender to crush the Biscoff cookies. Or, you can put them in a ziplock bag and run a rolling pin or glass over them until they’re crushed.
Melt the butter in a microwave-safe bowl.
Add marshmallows to the bowl and mix into the butter.
Microwave the marshmallows in 30-second increments, stirring after each time, until the marshmallows are completely melted and gooey.
When the marshmallows are melted, pour the Biscoff cookie crumbs into the marshmallow mixture and mix everything up until they are completely combined.
Transfer the mixture to the 8 x 8 pan and use your hands to press it into place.
Let it cool for an hour or two.
Then, cut your bars into squares and serve. I swear these taste like straight cookie butter bars. They are so delicious!
How do you store these bars?
I keep the leftovers, though there usually isn’t much left over, in a zipper baggie on the counter for 3-4 days.
Can you make these ahead of time?
I would recommend making them 1 to 2 days ahead of time. Otherwise, they might become stale.
