One of my family’s favorite meals is Mushroom Beef Chuck Roast. It’s a great meal because even with a family of six, there’s leftovers for lunch the next day. Plus, it’s one of those meals I can pop in the oven in the afternoon and forget about it until dinner time.

I love making this meal on busy weeknights when we have dance or art class. I can prepare it earlier in the day and not even worry about dinner until we get home. Plus, it smells so good while it’s cooking.

Ingredients to make Mushroom Beef Chuck Roast
- Beef Chuck Roast
- 16 oz sliced fresh mushrooms
- 16 oz bag of baby carrots
- Lipton Mushroom Onion Soup Mix
- Cornstarch
- Water
How do you make this Easy Roast recipe?
You’re going to love this because it’s really just a throw together and pop it in the oven for 3-4 hours. I like to put it in the oven before we head out for afterschool activities. Then, around 6-7 pm I whip up some mashed potatoes and dinner is ready!
I make my roast in a roasting pan with a lid. You can also use a dutch oven. I sometimes use my grandma’s Le Creuset Dutch Oven to cook it.
Set the oven to 300 F degrees.
First, place the roast in the dutch oven.
Next, dump the carrots around the sides of the roast.
Add the mushrooms with the carrots.
Sprinkle the Lipton Mushroom Onion Soup mix over the top of everything.
Add 3 cups of water.
Top it with the lid and place it in the oven for 3-4 hours.
At the 3-hour mark, I take it out of the oven and check the doneness of the meat. If it’s tender and I can easily smash it apart with a serving spoon, I know it’s done. But, if it fights me, I put it back in the oven for another 30 minutes to an hour.
When it’s tender, make a slurry with the cornstarch and water and pour it around the liquid.
Gently mix the cornstarch slurry into the liquid in the pan. Then, let it sit for 10-15 minutes while cooking the mashed potatoes. It will thicken during this time.
Once the liquid has thickened it makes a perfect gravy to go over the potatoes.

Instructions
