Savory comfort food is always delicious during the winter months, especially when it’s been cold and drizzly for days on end.  This is when I break out the Marie Callender’s pot pies for dinner.  We can each choose our favorite, and there’s nothing like digging into that golden flaky crust.
Before the cold weather hit last week, I headed to Walmart.  They were predicting snow and ice, and I was going to stock the pantry and freezer, just in case.  One year, we were trapped in the house for a week due to ice.  I had the kids each pick their favorite pot pie for an easy meal this weekend.
Pot pies are a hearty meal that takes little effort, and I love that. Â Whenever we have comfort food, I like to make a delicious salad to pair with it. Â I just love salad. Â One of our favorite salads is a wedge salad, but I decided to do things a little differently this time. Â Instead of wedges, I made salad disks. Â I think a disk of lettuce is easier to eat than a wedge. Â You can easily cut it up and it doesn’t fall apart like a wedge salad can do.
While we were shopping at Walmart, I noticed blood oranges were back in season.  I was thrilled! I love blood oranges, and they are only in season here from Dec/Jan until March.  I grabbed two bags full of them.  You’ll be seeing quite a few recipes with my favorite fruit in the coming weeks.
To go along with our pot pies, I made a Blood Orange Vinaigrette dressing, and it was amazing.  The salad topped with this amazing vinaigrette with bacon and goat cheese was just divine! Nate loved it, I loved, and even my teenager liked it.
I prefer to bake Marie Callender’s pot pies in the oven. Â It takes longer, but the crust tastes amazing that way. Â While we waited for them to bake, we played a game of Loot.

While the pot pies are cooling, you can whip up the salad. Â Disk salad is super easy to make. Instead of cutting into wedges, you’ll be cutting the head of lettuce into about 1-inch disks.
- Wash and dry a head of iceberg lettuce.
- Remove the stem.
- Slice into 1-inch thick disks.
- Add some crumbled bacon and goat cheese.
- Combine all the ingredients of the dressing and shake, then pour over the top of each salad.
In the recipe, I used pomegranate red wine vinegar. Â I actually got this by mistake one day when I was trying to buy regular red wine vinegar, but I loved it so much, that I’ve been using it all the time. Â For this recipe, plain red wine vinegar will work just as good.

Blood Orange Vinaigrette

Description
A delicious homemade vinaigrette dressing made with blood oranges.
Ingredients
- 1/2 cup olive oil
- 1/4 cup freshly squeezed blood orange juice
- 4 tablespoons pomegranate red wine vinegar (or plain red wine vinegar)
- 2 teaspoons sugar
- 1 teaspoon mustard
- 1 tablespoon minced garlic
Instructions
- Combine all ingredients in a mason jar.
- Shake vigorously until well combined.
- Pour onto salad and enjoy.

My go to comfort food in the dead of winter is a bowl of chicken soup with lots of veggies included. I have been looking for a single serve chicken pot pie for a while now–I didn’t realize Marie Callender makes them–off to that section I go next time I shop!
