Whenever I see a picnic in a movie, it’s always a picnic basket straight out of a fancy store full of wine, cheese, and weird stuff my kids would never eat. It just never seems real. My kids love picnicking, so we do it the easy way with Walmart’s Fresh, Hot Fried Chicken straight from the deli.
I actually ran by Walmart and grabbed an 8 piece of the grab-n-go packs after swim team practice for us to have an easy lunch today.
Most of the time Nate stops by the deli and grabs the chicken after work, while I make some quick sides. This is one of my favorite easy dinner nights. One of my family’s favorite sides is loaded red potato salad. It’s so easy to make, and tastes great.
First, wash the red potatoes and cut into small chunks.
Next, just barely cover the tops of the potatoes with water and boil until fork tender — about 10 minutes.
Drain the potatoes and add the sour cream, yogurt, cheese, bacon, and green onions. If you only have sour cream or only have yogurt, you can double the amount and skip the one you don’t have. It tastes good either way.
Mix thoroughly. I also gently mash the potatoes as I mix up the ingredients. My family likes it to not be so firm.

Ingredients
- 7–8 medium red potatoes
- 1/2 cup Greek yogurt
- 1/2 cup sour cream
- 1/4 shredded cheddar cheese
- 1/4 cup chopped bacon or real bacon bits
- 6 green onions, chopped
Instructions
- Wash and cut up the potatoes into small chunks.
- Boil the potatoes until fork tender, about 10 minutes.
- Drain the potatoes and then add yogurt, sour cream, cheddar cheese, bacon, and green onions. [br]If you don’t have yogurt AND sour cream, feel free to double the amount of one and just use that.
- As you combine all the ingredients and mix, smash the potatoes gently.
- Chill before serving.

While we’re waiting for the fried chicken to arrive, I chill the potato salad, steam a few ears of corn in the microwave, and slice up the watermelon. Then, I whip up a pitcher of iced tea and we’re ready to eat! It’s that simple!
We spend a lot of time at the water park, and this is one of those perfect meals we can take along for an easy dinner picnic. These foods are super easy to pack and serve at any picnic.
