It’s been sleeting with freezing rain since Sunday afternoon. School is closed today for the weather. The kids are thrilled for their instant 3-day weekend. My dear sweet husband, Nate, is going to attempt to drive to work. I think he should stay home. We’ve already heard reports on the radio that the freeway overpasses are frozen over in the direction he’ll be headed. I’m hoping I can convince him to stay home.
We live up north of the Dallas/Ft Worth area, so we usually get the bad weather much worse than the rest of the area. One time, we were basically trapped at home with about 4 inches of ice along our entire steep driveway, and both our cars are always in the garage. It took both Nate and me 2 days to scrape it off, and the kids were out of school for an entire week.
Last night, with the sleet coming down and freezing outside, it was perfect weather for a steamy bowl of stew. It was a last minute idea, so I didn’t have all day to simmer a stew on the stove. But, I’ve got a deliciously hearty recipe that you can make in a flash for dinner one night. It takes just minutes to prepare. You can simmer it for just a few minutes and it’s ready to go.
First, add a couple tablespoons of olive oil and about a tablespoon of minced garlic to the dutch oven and turn the heat on medium high. When you can start to smell the garlic, throw in about a pound of ground beef. Add about a 1/2 cup of tomato or vegetable juice, and brown the ground beef.
Once the beef is browned, add three cans of veggies, undrained. You want the juices. I usually add a can of green beans, a can of carrots, a can of potatoes (I liked diced, but I only had sliced today), and if you want, add a can of corn. My family doesn’t like when I add corn to beef stew, so I typically skip it.
To the veggies, you’ll then add 1 tsp of garlic powder, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp of dried onion. Add 2 cups of tomato/veggie juice and add 1-2 cups of beef stock or water. Stir it all up and then let it come to a boil while it’s still on medium high.
Now that it’s really boiling, turn the fire down to medium low and let it simmer for 10-15 minutes.

Then, serve with a nice slice of sourdough bread or crescent rolls and some salad or fruit salad. My favorite is sourdough bread, but my family goes nuts for crescent rolls so that’s what we had tonight for dinner along with clementines and pineapple spears. Another thing they love is when I make slices of cheese toast.
This is an easy weeknight meal that you can whip up when you have no idea what to cook for dinner. It takes just minutes to put together. In less than 30 minutes, you’re sitting down to something delicious. And it’s great to take for lunch the next day, too.

In my younger days, I loved Hamburger Helper as a quick and easy meal. Now that I’m older, I’m trying to lay off the processed foods as much. This is the perfect option. I’m a lover of beef so this is perfect for me.

I’ve never had hamburger stew, but it sounds fantastic!
This is not a stew. This is a soup. My Dad made and Irish Stew with ground beef instead of stew beef but all the recipes I am able to find add way too many different vegetables or are called a stew but really a soup. His only herbs and spices he used was salt pepper (lots) and onion and celery. I guess I will keep looking.
I never really thought about the difference between stew and soup until your comment. I just looked it up and stews are so thick you can serve them just on a plate and not a bowl. I had no idea! So I guess you’re right, this is more of a soup. Sorry!
