I just tried the new Campbell’s Homestyle Light Baked Potato with Bacon & Cheddar soup, and it was so creamy and delicious. It’s a perfect meal to warm you up from the cooler weather. I decided to whip up some Easy Cheesy Cornbread to go with it. I just add a few extra ingredients to a cornbread mix and bake it while I’m getting the soup ready.
I love to have something to soak up the last bit of soup. With a flavor like baked potato and bacon and cheese, I thought a cheesy cornbread would be perfect.

Description
A quick way to turn regular cornbread mix into something delicious.
Ingredients
- 1 small box of cornbread mix
- 1/3 cup buttermilk
- 1 egg
- 2/3 cup of cheddar cheese
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 400 and grease a small pan or 8-inch iron skillet.
- Mix together all the ingredients. Set it aside for a few minutes while the oven preheats. This starts the process on the cornbread.
- Pop it in the oven for 15-20 minutes until it’s starting to turn golden.
- Remove from oven and let cool for just a couple minutes before slicing and serving.

Campbell’s soup has always been a favorite of mine, ever since I was a kid. I remember the warm deliciousness when my mom would make me a bowl after a long day.
One thing I’ve always loved about Campbell’s soup is that they never skimp on the veggies. Just look at those big chunks of baked potato!

Bring on the soup and cornbread weather! I haven’t seen the new Homestyle Light 100 calorie soups, but I’ll be on the lookout for them. Cornbread is my very favorite bread and your cheesy cornbread looks perfectly paired with the soup.
