I’m so excited! Recently I joined the Peanut Butter Bash.  It’s a group of lovely bloggers who post a peanut butter recipe once a month.  At the beginning of each month, we’re given two ingredients – peanut butter and something else.  Then, it’s time to come up with something delicious.  This month was peanut butter and jelly – one of my favorite combos!

Do you love peanut butter and jelly? It was one of my favorite things as a kid, and even now, I love a glass of milk and a pb and j sandwich.  Today I’ve got a little twist on the peanut butter and jelly sandwich – Peanut Butter and Jelly Donuts!

This is a super easy way to make donuts.  Usually I am a fly-by-the-seat-of-my-pants kinda girl, so when I get the idea to make donuts, I don’t want to make dough that has to rise or be refrigerated.  I just want to make the donuts, you know? This is why I love using refrigerated crescent rolls.  No waiting!

You just unroll the dough and cut out the donuts.  I usually heat up the oil while I’m cutting them out, so everything is ready to go. They cook for less than a minute on each side, and then we let them cool for a bit while we make the filling.

Ingredients

  • 1 sheet of refrigerated Crescent roll dough
  • 8 oz mascarpone cream
  • 1/3 cup peanut butter
  • 2 tablespoons + 1/4 cup powdered sugar
  • 1/2 cup jelly or jam
  • Oil for frying

Instructions

  1. In a deep skillet, add 2-3 inches of oil. Heat on medium high to reach about 350 degrees.
  2. Unroll dough on parchment paper. Use a 3-inch biscuit cutter or round cookie cutter to cut 12 circles of dough.
  3. Add 3-4 dough circles to the hot oil. Allow them to cook for about 30 seconds to 1 minute, and then flip over and let the other side puff up and cook for an additional 30 seconds.
  4. Let the donuts cool on paper towels.
  5. After 30 minutes, combine the peanut butter, mascarpone cream, and 2 tablespoons of powdered sugar and beat until smooth.
  6. Fill a pastry bag with a round tip with the mascarpone peanut butter cream and pipe about a tablespoon into each donut.
  7. Fill a second pastry bag with a round tip with 1/2 cup of jelly and pipe into the donut a little less than a tablespoon right next to the mascarpone peanut butter cream.
  8. Once you've filled all the donuts, then sprinkle with powdered sugar.

When I was at the store the other day, they had mascarpone cream on clearance, so I bought a few containers.  I thought it would be perfect to combine with peanut butter to make a sort of pastry cream. While the donuts were cooling, I mixed mascarpone cream, peanut butter, and a little bit of powdered sugar. I’m going to have to figure out a way to work this cream into another recipe.  I loved how it came out!

To fill the donuts, I just made up pastry bags of the mascarpone peanut butter cream and for the jelly.  Then, I piped about 1 tablespoon of the cream and slightly less of the jelly into each donut.  I dusted some powdered sugar over each donut to finish them off.

They were devoured! My kids loved them, and I swear they tasted just like bakery style cream filled donuts, only better! I can’t wait to try this out again with some other fillings.
