It’s that time again! This is another in my series to make crazy cupcake flavors from box mix. For these cupcakes, I combined two of my favorite things – cupcakes and Halloween to make Pumpkin Cupcake Ghosties from a Box
My husband loves my pumpkin cheesecake cupcakes and needed something to take to work for a potluck. He has become the cupcake king at work. Â For a festive look, I decided to turn them into little ghosties for Halloween.
These are kind of underrated Halloween treats because they don’t look too Halloween-y for grownups.
I also decided to use his coworkers as my taste testers and try my hand at adapting my most favorite cupcake flavor into one of my box cake mix series.
These came out delicious and spicy. My husband and his co workers didn’t realize I used a box mix over making them from scratch. Though I do prefer the pumpkin cheesecake cupcakes from scratch.
But in a quick fix or for someone who doesn’t love to bake, these are nearly just as good and require a lot less ingredients.
Preheat oven to 350. Beat all ingredients together until smooth. Set aside.
Turn speed to medium and beat for an additional 2 minutes. In cupcake liners layer pumpkin batter, then cheesecake batter, then pumpkin batter. Then, I jiggle them a teensy bit to smooth out the layers.
Bake for about 15 minutes.
Tip – I have three sizes of scoops from Pampered Chef. I’ve found if I use the medium scoop for the pumpkin batter and the smallest scoop for the cheesecake, it hides the cheesecake perfectly in the center of the cupcake.
**Because there is cheesecake in the middle, you can’t insert a toothpick into the cupcakes to see if they are done. When I cook them, they are always done in about 15-16 minutes. Just make sure the top layer of pumpkin batter looks “done.”

How do you make the frosting?
Mix all ingredients except chocolate chips until combined. Then, beat for 3-5 minutes until fluffy. This is enough to frost 24 cupcakes nicely.
Use a large round tip to swirl into ghostie shapes.
Top each ghost off with two mini chocolate chip eyes.

Pumpkin Ghost Cupcakes
Ingredients
Cheesecake Batter
- 1/2 cup powdered sugar
- 8 oz cream cheese, softened
- 1 egg white
- 1/2 tsp vanilla
Cupcake Batter
- 1 white box cake mix
- 2 eggs
- 1 cup of water
- 15 oz can pumpkin puree
- 3 heaping tsp pumpkin pie spice
Ghosties Cream Cheese Buttercream Frosting
- 1/2 cup of butter (1 stick), softened
- 8 oz cream cheese, softened
- 3-4 cups of powdered sugar
- 4-5 tbs milk
- Mini chocolate chips for ghost eyes
Instructions
Preheat oven to 350 F degrees.
Cheesecake Batter:
Beat all cheesecake ingredients together until smooth. Set aside.
Cupcake Batter:
Mix all cupcake batter ingredients on low until well combined.
Turn speed to medium and beat for an additional 2 minutes.
In cupcake liners layer pumpkin batter, then cheesecake batter, then pumpkin batter. Then, I jiggle them a teensy bit to smooth out the layers.
Bake 15-16 minutes.
Make sure the top layer of pumpkin batter looks done.
