Halloween’s over and now it’s a race to Christmas. And who wouldn’t love these adorable little Christmas Coconut Mice? They’re easy to make, and full of rich coconut candy with a cherry inside. These are quick to make and always a hit during the holidays.
The cherry stem makes the cutest little tail and the almonds make up adorable ears.

Ingredients to make Christmas Coconut Mice
- 3 cups sweetened shredded coconut
- 2 cups confectioners’ sugar
- 1/3 cup sweetened condensed milk
- 12 marachino cherries with stems
- 1 pound chocolate almond bark
- 1/4 cup sliced almonds
- Sprinkles for nose and eyes
How to make Christmas Coconut Mice
In a large bowl using an electric mixer combine the coconut, powdered sugar and sweetened condensed milk until it’s completely combined.
Take about 2 tablespoons of the mixture and place a cherry in the middle with the stem out for a tail.
Roll the mixture into a ball around the cherry and taper the end to look like a mouse shape.
Place on a parchment lined tray and repeat with the rest of the mixture.
Freeze all the mice for about 1-2 hours.
When ready to dip melt your chocolate in a microwave safe container in 30 second increments until melted and smooth.
Carefully dip each mouse into the chocolate, leaving the stem exposed.
Place back onto the parchment paper and immedietly add 2 sliced almonds for the ears and sprinkles for eyes and nose.
Serve and enjoy! The perfect addition to your holiday party!
Tips for the Christmas Coconut Mice
- Store leftovers in an airtight container in the fridge for up to 5 days.
- You can use white almond bark as well.
- You can use mini chocolate chips for the eyes or sprinkles.
- You can skip the cherries and use string licorice for the tail.
