It’s the last post of the year, and it’s a fun one for grown ups! A couple days ago I told y’all about my cake mishaps, but I turned it into something totally fun – Jello Shot Cake Balls! I was making a pink champagne poke cake, and then I dropped it on the floor! I was totally bummed. However, I was smart enough to put a lid on it before I dropped it.
So, technically the cake was saved, even though it was in crumbles. Then, my mind started churning because I knew I could turn that cake into something. I decided I could make jello poke cake balls. It was then I saw the bottles of flavored vodkas sitting on my new rolling cart, and I had an idea.
Instead of adding frosting to turn it into cake balls, I was going to add vodka! Yep vodka!
Originally, I was making the poke cake with champagne and raspberry jello, so those were already in the cake to make it moist. Then, I added 1/2 cup of flavored vodkas. I mixed strawberry vodka and whipped cream vodka, added it to the cake, and stirred it up nicely. I stopped at 1/2 cup because I didn’t want the vodka to over saturate the cake and make it mush.
Next, I popped it in the freezer for a few minutes to get it a little frozen. I left it for about 30 minutes.
Then, I pulled the cake out and used my medium scooper to form cake balls. After I had made them all, I put them back in the freezer for about an hour.
During this time, I melted my candy melts. I hate candy melts. They never melt right for me, ever. Ghirardelli white chocolate wafers are a serious dream when I’ve got them. They melt perfectly every time. But it was pretty late, so I settled for a battle with candy melts.
I dipped each one in the chocolate and set them on wax paper. I added a pinch of edible confetti stars and hearts. These –> edible silver stars and pink hearts, for a perfect little treat for New Year’s.
Add a little vodka to your jello cake balls for a fun New Year's Eve treat!

- 1 box cake mix (white or yellow) - made according to directions
- 6 oz box of raspberry jello
- 1/2 cup pink champagne
- 2 cups boiling water
- 1/2 cup flavored vodka (I used strawberry and whipped cream mixed together)
- 1 bag of candy melts
- edible confetti sprinkles
- Make the cake according to the directions and let it cool.
- Next mix boiling water, raspberry jello mix, and champagne.
- Pour over cake.
- Using a spoon or fork tear the cake up like you're going to make cake balls.
- Add 1/2 cup of vodka to the cake.
- Freeze it for about 30 minutes.
- Take a medium-sized scooper and make cake balls.
- Place the cake balls on waxed paper on a cookie sheet and freeze for at least an hour.
- When the cake balls are a little frozen, heat up the candy melts until they are smooth and ready for dipping.
- Remove the cake balls and work quickly to dip them and set on wax paper.
- While the chocolate is still warm, sprinkle the edible confetti glitter on each one.
- Serve when chocolate has ardened
