It goes perfectly with something you’d find at the Night Court or even on Tamlin’s dinner table, and if you top it with greenery like green onions, it looks goes perfectly with any high-fae or fairy theme.

Ingredients needed to make Velaris’ Violet Sweet Potato Hummus
Even if you’ve never made hummus before, this is easy to make. There’s no cooking involved, other than steaming the sweet potatoes, which you can totally do in the microwave.
- 10 oz bag frozen cubed purple sweet potatoes
- 15 oz can chickpeas (garbanzo beans
- tahini
- minced garlic
- lemon juice
- salt
- water
- green onions
- olive oil
- poppy seeds

How do you make Violet Sweet Potato Hummus
Steam the purple sweet potatoes. If you can steam in the bag, follow those directions. If you cannot, place a couple tablespoons of water in a microwave-safe bowl and add the sweet potatoes. Microwave for 6 minutes and allow to cool for a couple minutes.
Drain the chickpeas.
Combine the tahini and lemon juice and use an immersion blender until it’s completely mixed and creamy.
Combine the tahini mixture, half the water, garlic, half the can of chickpeas, and the sweet potatoes and use the immersion blender.
If it’s not liquid enough, add the rest of the water and continue using the immersion blender.
When it’s completely blended, add salt to taste.
Refrigerate to chill.
Chop 2-3 green onions. I like to cut them with scissors to make it easier.
When ready to serve, drizzle a tablespoon of olive oil over the top and sprinkle green onions and a teaspoon of poppy seeds.
Serve with pita bread, crackers, etc.
Tips for making Velaris Violet Sweet Potato Hummus
Use either a blender, food processor, or immersion blender.
You may need additional water, if your hummus comes out really thick. Just add a little at a time as you use an immersion blender.
When I make this, sometimes it comes out looking more pink and sometimes purple. If you want to make it a darker color, add a small drop of purple gel food coloring when using the immersion blender.

Velaris Violet Sweet Potato Hummus
