Some nights, I want to get dinner on the table with almost zero effort. That’s where these 4-ingredient Sour Cream and Green Sauce Chicken Enchiladas come in. The first time I made them, it was one of those evenings—no energy, no plan, just a box of frozen chicken taquitos. I had no plan for dinner but was craving something creamy and comforting. Five minutes later, it was in the oven… and my family was asking for seconds before I could sit down. This recipe is ridiculously simple, wildly delicious, and exactly the kind of meal you keep in your back pocket for busy weeknights or cozy weekends when you just need something easy (and extra cheesy).
