Mr E. has been having a rough time with the new school year. His friends are all in different classes, and he doesn’t really know anyone in his class. So, I decided to head to Walmart and get supplies to make him some Captain America cupcakes.
I’m surprising him with Captain America cupcakes after school today while we catch up on The Avengers. I’m hoping it will perk him up a little. These were really a blast to make. I think kids would love to help out with the design, too!
Using red, blue, and white M&Ms, I made Captain America’s shield on jumbo cupcakes. And…the cupcakes have a surprise inside. I layered them red, white, and blue!
Layering colored cupcakes is not very hard. I often do it with rainbow cupcakes, but this time, we were going for patriotic Captain America. Check out how I made them here:
I used a regular white box cake mix, except I used butter instead of oil. I divided it into 3 bowls. The white batter was left plain. For the red batter, I used 36 food coloring drops. Then, for the blue batter, I used 25 food coloring drops. Just carefully spoon each layer and smooth out with your finger.
Captain America Cupcakes
Ingredients
- 1 white box cake mix
- 3 eggs
- 1/3 cup of butter
- 1 cup of water
- white buttercream frosting
- red, white, blue M&M’s®
Instructions
- Preheat oven to 350.
- Add cupcake liners to muffin tins.
- Add all ingredients to cake mix. Beat on medium low for 30 seconds.
- Then beat on medium for 2 minutes.
- Separate batter into 3 bowls. Keep one white, add red coloring to one, and blue coloring to the other.
- Spoon red, then white, then blue to 2/3rds full of each cupcake.
- Bake for 24-25 minutes.
- Remove from oven and allow to cool.
- Prepare buttercream icing.
- Once the cupcakes are cool, ice each cupcake with buttercream.
- Then embellish with M&Ms!
