Ice cream floats are one of my favorite desserts. I like them year round, even when it’s still not quite summer? It’s just like being a kid again.
The other day, I was standing in the ice cream aisle at Target — which is a frequent thing. My family just loves ice cream. If I buy ice cream, the four of them inhale it.
I was looking at all the fancy pints of ice cream, and I started thinking about all the delicious combination flavors of ice cream. Wouldn’t they make totally awesome gourmet floats? Yes they would. So, I brought a few pints home to experiment.
Here’s three ways to make some fancy gourmet ice cream floats that you’ll love. Heck, maybe the kids will, too! My kids loved our Butter Beer version.
Some have chocolate Pop Rocks candy. Yep, chocolate! Did you know they made chocolate flavor? I had no idea until I saw them in this totally cool hipster candy store on the square where we live. It’s called Atomic Candy, and my kids love this place. It’s where you can buy anything from underwear for squirrels to candy by the pound and even breastmilk lollipops, plus so much more!
Let’s get started. First up is the Fancy Butter Beer Ice Cream Float because I just love all things Harry Potter and coffee toffee crunch ice cream just screamed butter beer ice cream float.
Fancy Butter Beer Ice Cream Float
- 2 scoops Coffee Toffee Crunch ice cream
- 1 mini can Root Beer
- Butterscotch sauce
- Butterscotch chips
It’s a very butter beer flavor with a hint of coffee.
The second gourmet ice cream float is Chocolate Caramel Explosion made with caramel chocolate brownie ice cream. This one is topped with chocolate popping candy because who doesn’t like popping candy?
Chocolate Caramel Explosion
- 2 scoops Caramel Chocolate Brownie
- 1 mini can Dr Pepper
- caramel sauce
- 1 teaspoon of milk chocolate popping candy
The Dr Pepper is the perfect addition to the caramel flavors in this one, and you’ll have little explosions in your mouth when you slurp up the chocolate popping candy.
Last, but certainly not least is the Double Chocolate Minty Surprise. With this one I got ahead of myself and forgot to take all the pictures involved, but I’m betting you can figure it all out.
It’s full of chocolate mint ice cream, chocolate syrup, and chopped up Junior Mints. Plus, who couldn’t risk more chocolate popping candy? That’s the surprise!
Double Chocolate Minty Surprise
- 2 scoops Chocolate Mint ice cream
- 1 mini can ginger ale
- chocolate syrup
- 6-8 chopped Junior Mints
- 1 teaspoon of chocolate Pop Rocks popping candy
As a mint lover, this one is my favorite. The ice cream has chocolate mints in it and then the addition of all the other ingredients makes it just divine!
You’ll love these decadent gourmet ice cream floats, and they’re just simple to make! Next time you’re in the ice cream aisle, let your imagination go wild with your own version of gourmet ice cream floats!
What’s your favorite ice cream flavor?

I would be all over that butterbeer one. First off…Harry Potter. But secondly, butterscotch is delicious. Pinning this for later.
