Can you believe it’s almost summer? My kids have just a couple weeks of school left, and then it’s beach vacation time and summer day camps. During the summer, we have lots of activities, so often times I need a quick and easy lunch for them before we head out the door. Chicken nuggets are a perfect kid friendly meal for summer time.
Recently I was at Sam’s Club and found the Panko Chicken Nuggets. They are a little different from the usual Tyson chicken nuggets since they are breaded with panko bread crumbs. But, they are delicious!
I was so happy to find them at my Sam’s Club because these are my kids’ favorite chicken nuggets. They just love them!
To add a touch of mommy-made goodness, I love to whip up homemade dipping sauces for our nuggets. They really don’t take much time and fresh made dips taste so good! Today I’m sharing two of my secret dipping sauce recipes with you — Back Country BBQ Sauce and Kickin Chicken Sauce.
The first dipping sauce is an old family recipe for bbq sauce. You can definitely use it for more than just nuggets. I’m thinking of changing the name from Back Country BBQ Sauce to OMG BBQ Sauce, since OMG is the first thing anyone says when they try it! Everyone really loves it. You can serve it hot or cold, and keep the rest in a mason jar in the fridge for later.
Beginning with my grandparents, my family has been eating at a certain barbecue restaurant since before I was born. We still eat there today. Years and years ago, they gave my mom their barbecue sauce recipe, and we’ve been making it at home ever since. My mom, brother, and I each make it our own with a little change here and there.
The original recipe called for 12 oz of water and 2 tbs of brown sugar, but since we have diabetes running through our family, I changed it up a bit. Now instead of those ingredients, I add a can of Dr. Pepper TEN. It cuts the sugar, and my family can’t get enough of that sauce.
The second sauce is called Kickin Chicken sauce. My whole family loves this sauce, especially my youngest. It’s a mayonnaise-based sauce, and I’ve seen a similar sauce at local chicken restaurants. This one is best to make up ahead of time and let it sit in the fridge for at least an hour before serving. It allows the ingredients to really mix together into absolute deliciousness!Print
Back Country BBQ Sauce
- 16 oz. Heinz ketchup
- 1 tsp French’s mustard
- 1/2 tsp salt
- 1/2 tsp black pepper
- a pinch of cayenne pepper
- 1/2 tsp granulated (powdered) garlic
- 1 tsp Tabasco
- 1 tbs liquid smoke
- 2 tbs Worcestershire sauce
- 1 tbs lemon juice
- 1 can Dr Pepper TEN
Kickin Chicken Sauce
- 1/2 cup mayonnaise
- 1/4 cup + 1 tbs ketchup
- 1/2 tsp pepper
- 1/4 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- Combine ingredients in saucepan.
- While stirring constantly, bring to boil.
- Reduce heat. Simmer 15-20 minutes on low.
- Refrigerate leftovers.
Kickin Chicken Directions
- Combine ingredients and mix well.
- Transfer to a glass jar and let it sit in the fridge for at least 1 hour.
- Serve cold.
