I love a good grilled cheese sandwich. Yesterday, I shared a different type of grilled cheese – Angel Food Cake Grilled Cheese. Today I’m sharing my Bruschetta Grilled Cheese! This sandwich has some of my favorite ingredients – garlic, sun dried tomatoes, and melted provolone.
It’s been freezing here in Texas, and there’s nothing better than comfort food like a gooey grilled cheese to warm your belly when it’s cold like this. For the bruschetta grilled cheese, I found all my ingredients at Walmart — Wonder bread, Kraft Natural cheese slices, and Blue Bonnet spread. While I was grocery shopping, I also grabbed sun dried tomatoes, fresh basil, some Philadelphia Cream Cheese, and I decided to make my own garlic spread with Blue Bonnet spread.
This is a super easy, but amazingly delicious grilled cheese sandwich. The first thing you need to do is make the garlic spread. What’s great about Blue Bonnet spread is that you don’t have to wait for it to soften up. You can take a stick straight from the fridge, and it mixes easily.

Homemade Garlic Spread

An easy garlic spread for bread.
Ingredients
- 1 stick of Blue Bonnet spread
- 1 tablespoon parsley
- 1 tablespoon parmesan cheese
- 1 tablespoon minced garlic
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Cut the butter into 1 tablespoon pieces.
- Combine all ingredients and thoroughly mix.
- Store in the fridge.

Once you’ve made the garlic spread, we can move on to the grilled cheese. You can buy sun dried tomatoes already chopped up in a jar of olive oil, but I prefer to do it myself. I think they taste so much better freshly chopped. I chop about 5-6 sun dried tomatoes halves per sandwich.
Next, I grab some fresh basil and julienne it. This is one of my favorite parts of this sandwich because the basil becomes so aromatic as you chop it.
I’ve found the best way to keep this sandwich together is to put the chopped up basil on one slice of Wonder bread, and then cover it with a slice of provolone cheese.
Then, on the other slice of bread, I add some softened cream cheese with the chopped sun dried tomatoes on top. I’ve found that this way when you’ve made your grill cheese, the cheese will melt and hold everything together perfectly.
Now here’s how you make it amazing — take the garlic spread and put it on the outside of the top slice of Wonder bread. Then, you’ll also add a small dollop in the skillet to melt. You can check out how I make it in this 15-second video here:
