Do you have a picky teen? My 15 yr old usually takes just peanut butter and honey sandwiches every day, but I know it gets old. I’ve been playing 20 questions with her to see if I can figure out some other fast and easy lunches. I finally found one. My picky eater likes tuna salad! So with a couple of pouches of Bumble Bee tuna, I made her Tuna Salad Lettuce Wraps.
It can be a bit tricky when it comes to school lunches for teens. Ms Em likes it easy and doesn’t want to waste time in line at the microwave. So, it’s usually sandwiches for her. But, even then she doesn’t really like anything but peanut butter variations, which eating 5 days a week can get boring fast.
I was hoping she’d love this meal, and it was a success! She even ate it for breakfast as I was making it for her lunch! To prepare it for lunch, I just put three to four lettuce wraps in a ziplock bag, and I fill a small container with around 1 to 1 1/2 cups of tuna salad. This way the lettuce won’t get soggy, and she can spoon it into the wraps herself.
Tuna Salad is such an easy meal to whip up. With a little bit of mayonnaise, you can pretty much put whatever’s in the fridge in it. I had just boiled a few eggs, so I chopped one up and put it in the mix.
After I let the tuna salad chill for a bit in the fridge, I used romaine lettuce leaves for the lettuce wraps. I’ve made this a couple other times and have used cabbage leaves as well. Miss Em thought both were great.
- 2 (2.5 oz) pouches or 1 (5 oz) can of Bumble Bee Tuna
- 1/4 cup mayonnaise
- 1 boiled egg chopped
- 2 tablespoons sweet pickle relish
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 green onion entirely chopped
- 1 teaspoon of freshly squeezed lemon juice
- 5-6 romaine lettuce leaves, washed and dried
- Combine all ingredients and mix well.
- Place in a covered dish and refrigerate for 1-2 hours.
- On one lettuce leaf add 1/2 cup of tuna salad.
- Wrap and enjoy.
