Do you have a picky teen? My 15 yr old usually takes just peanut butter and honey sandwiches every day, but I know it gets old. I’ve been playing 20 questions with her to see if I can figure out some other fast and easy lunches. I finally found one. My picky eater likes tuna salad! So with a couple of pouches of Bumble Bee tuna, I made her Tuna Salad Lettuce Wraps.
It can be a bit tricky when it comes to school lunches for teens. Ms Em likes it easy and doesn’t want to waste time in line at the microwave. So, it’s usually sandwiches for her. But, even then she doesn’t really like anything but peanut butter variations, which eating 5 days a week can get boring fast.
I was hoping she’d love this meal, and it was a success! She even ate it for breakfast as I was making it for her lunch! Â To prepare it for lunch, I just put three to four lettuce wraps in a ziplock bag, and I fill a small container with around 1 to 1 1/2 cups of tuna salad. This way the lettuce won’t get soggy, and she can spoon it into the wraps herself.
Tuna Salad is such an easy meal to whip up. With a little bit of mayonnaise, you can pretty much put whatever’s in the fridge in it. I had just boiled a few eggs, so I chopped one up and put it in the mix.
After I let the tuna salad chill for a bit in the fridge, I used romaine lettuce leaves for the lettuce wraps. I’ve made this a couple other times and have used cabbage leaves as well. Miss Em thought both were great.

LOOKS YUMMY . . . lettuce wrapped tuna salad! No bread for a typical sandwich, so NO CARBS! I’ve always liked tuna and so I plan to try this recipe as a boiled egg is included for more protein. I’ll also click on the Bumble Bee website for more recipes. Because my husband is form India, I often add curry powder to my recipe so it’s spicy. Also, I don’t like mayonnaise, so I use creme fraiche instead. THANKS for sharing. Sarah Helene in Minneapolis
This looks fantastic! I love lettuce wraps and I love tuna salad, so I have no idea why I never thought to put the two together. Such a quick and easy (and healthy!) lunch. Will definitely have to add this into my rotation. I’ll just add in a little bit of vinegar because I love my tuna salad to be tart. Great post!

These look yummy!!!
Great meal for a busy weekday…light, easy, fresh, and healthy! Love it!
This looks so crisp ad refreshing! I love simple quick fix meals..
Looks delicious! We eat a lot of tuna lunches around here, tuna being a healthy brain food and all. I usually stuff it into a thin whole wheat pita pocket with lettuce but should probably be eliminating the bread altogether.
