For our family, Sundays are lazy days we spend together.  I always make breakfast and a Sunday dinner with a home cooked meal served with delicious comfort foods.  This past weekend, I cooked a brisket in the slow cooker and paired it with some Ore-Ida Bold & Crispy fries, and fresh ears of corn.

The weekend is important for us to reconnect.  Sunday is the one day our family spends time together.  We play video games or board games, watch movies, or go hang out at the park.  I like to plan an easy meal that doen’t take a lot of work for dinner.

Barbecue brisket is a favorite we don’t have very often, but it’s so simple to cook.  I use this basic recipe HERE that I shared for brisket sliders. Instead of cooking it for 4-5 hours in the oven, I cook it on LOW in the slow cooker for 9-10 hours.

Along with brisket, my kids love fresh corn.  I love when it’s in season and at such a low price.  I’ve seen some fancy recipes for cooking it on the grill, but Nate and I’ve found the easiest method is to just throw it on the grill without anything added.

He rubs the grate with olive oil and fires up the grill. Then, we simply just throw it on the grill just as it is. He turns it 3 times – once every 6 minutes. Then, we bring it in, and I shuck the corn and rub it down with a little butter.

Grilled Corn

Yields 4-6

Save Recipe

Ingredients

  • 4-6 ears of corn
  • olive oil
  • 2-3 pats of butter
  • Optional: salt and pepper

Instructions

  1. Rub the grill grates with olive oil.
  2. Preheat the grill to about 350 degrees.
  3. Spread corn out on grill and close the lid.
  4. Grill for 6 minutes and then turn.
  5. Do this 2 additional times, so the corn grills on 3 sides and cooks for about 18 minutes.
  6. Remove from grill.
  7. Shuck corn and rub butter all over it.
  8. Serve.

Sometimes Nate or I tell a story from when we were teenagers and made some pretty poor decisions. Often they’re funny stories, but we sometimes tell serious ones as well. The kids love these stories and ask tons of questions.  Then, we ask them what they would do in that situation. I love how it gets them to think about responsibility and what it takes to make a good decision.
