My husband and I are always looking for shortcuts to better choices when we plan our meals together. One of our favorite meals is taco night. To skinny it up a bit, I decided to take my husband’s love of lettuce cups into a twist on taco night.
I got the idea when I was grocery shopping at Kroger and saw the new Uncle Ben’s® Brown Rice & Quinoa, Roasted Red Pepper. I thought the roasted red pepper flavor would be great with taco meat. These taco lettuce cups would also be great with Uncle Ben‘s® Long Grain & Wild Rice Fast Cook Recipe and Uncle Ben‘s® Long Grain & Wild Rice, Original Recipe, too.
If you’re using the Uncle Ben’s® Brown Rice & Quinoa, Roasted Red Pepper, go ahead and start the rice so that everything else will be ready when it’s done.
I like to make it in the microwave so I don’t have to watch it too closely while I’m cooking other ingredients on the stove.
Next, brown the ground beef. Make sure to really drain the meat before adding the taco seasoning and water.
When the taco meat is done, the rice should be close to ready. It smells amazing!
Wash the romaine hearts, and then, wrap them in paper towels and gently squeeze out any excess water. I gently separate them and cut off a couple inches at the bottom of each lettuce cup.
Next, chop up tomatoes, onions, and any herbs like cilantro or you can be lazy like me. One of the things I love about Kroger is you can find onions and pico de gallo already chopped and ready to go in the produce section. Don’t forget to grab some guacamole, too!
I made a quick video for how I like to prepare taco lettuce cups, but you really can’t go wrong adding the ingredients anyway you’d like.

Oh how delicious. I’m going to try this, I make all things Mexican I can find. We love spicy and delicious and that’s what almost all Mexican recipes are. I’ve only tried a couple on blog sites that I didn’t care for.

Uncle Ben’s is always coming out with new flavors. Now I so want to try the roasted red peppers.
I love homemade tacos with lettuce wraps and often use Uncle Ben’s rice in them but never the roasted red pepper flavor. I think I will give that a try next time.
