Triple Berry Puff Pastry Mini Pies

  • 1 sheet of puff pastry, thawed
  • 1/2 pint blueberries
  • 1/2 pint raspberries
  • 45 strawberries, quartered
  • 4 tablespoons of sugar
  • 3 tablespoons corn starch
  • 1 tablespoon raw sugar
  • dash of cinnamon
  • pinch of salt
  • 2 tablespoons milk or cream

Cream Cheese Whipped Cream

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 2 oz cream cheese, softened

Instructions

Triple Berry Puff Pastry Mini Pies

  1. Preheat oven to 425 F degrees.
  2. On parchment paper on a cookie sheet, cut the puff pastry into 4 squares.
  3. For each square, fold up 1/2 inch on each side and pinch together to form a pie crust.
  4. Combine berries, sugar, corn starch, cinnamon, and salt. Mix gently.
  5. Divide the berry mixture into each puff pastry crust.
  6. Brush the edges of puff pastry with milk or cream.
  7. Sprinkle with raw sugar.
  8. Bake for 20 minutes until golden. Remove and let cool while making the cream cheese whipped cream.

Cream Cheese Whipped Cream

  1. Combine all the ingredients and whip until soft peaks form.
  2. Use an ice cream scoop to add a scoop to the top of each berry mini pie.
  3. Serve immediately.
