Make Your Own Baking Powder Corn Free with this simple recipe that’s perfect for anyone avoiding hidden allergens—especially if, like me, you’re navigating life with my Mast Cell Activation Syndrome (MCAS).
Because of a genetic mutation, I react to even tiny traces of corn, and unfortunately, most commercial baking powders contain cornstarch as a stabilizer. This homemade version is clean, easy to whip up, and a total game-changer for safe, allergy-friendly baking.

Hereditary alpha Tryptasemia
My genetic mutation is called Hereditary alpha Tryptasemia, which is a recognized diagnosis for medical insurance (since 2017!). I have extra alpha genes that make me more prevalent to anaphylaxis. Because of this I take very high doses of antihistamines around the clock in order to not react to food. Prior to this, I would end up in the emergency room in anaphylaxis all the time.
I have to make most of my food from scratch. I use this baking powder to make some very simple pancakes without any eggs in them. I have to eat very simple organic and non-GMO ingredient foods because it’s very hard to find my triggers.
Ingredients to make Corn Free Baking Powder

- Arrow Root Powder
- Baking Soda
- Cream of Tartar
How do you make Baking Powder without Corn?
This is very simple to do. It’s a 1:1:2 ratio.
- 1 part Arrow Root Powder
- 1 part Baking Soda
- 2 parts Cream of Tartar
Sometimes I make a small batch with 1 teaspoon of arrow root powder, 1 teaspoon of baking soda, and 2 teaspoons of cream of tartar. Sometimes, I double, triple or quadruple this recipe.

Here are the safe foods that I eat.
- Organic Apple Sauce – Aldi’s or The Simple Truth
- Fage Yogurt – plain – non-GMO
- Good Culture or Daisy brand cottage cheese (these do not contain gum thickeners)
- Walker’s Shortbread cookeis
- Fresh Mozzarella Cheese
- Organic Chicken Tenderloins – boiled (this has the lowest histamine)
- Organic Plain Oatmeal
- Simply Lay’s Potato Chips
- French Baguette – check ingredients to make sure they are very simple – water, flour, salt, etc.
- Organic/Pasture-raised Eggs
- Kerrygold butter
I have a very limited diet. But these are things I have found I do not react to.

Corn Free Baking Powder
Ingredients
- 1 part Arrow Root Powder
- 1 part Baking Soda
- 2 parts Cream of Tartar
Instructions
- Combine 1 part arrowroot powder, 1 part baking soda, and 2 parts cream of tartar. (For Example, 1 tablespoon of arrowroot powder, 1 tablespoon baking soda, and 2 tablespoons cream of tartar).
- Mix until well combined.
- Store in a sealed container such as mason jar.
- Use in place of store-bought baking powder.
