I know, I know. Everyone is super excited about football and The Big Game coming up in February, but in this house, we love our basketball! My husband and I were born and raised in Dallas/Ft Worth, so Dallas is our home team. Nate’s been a huge fan since he was a teenager. That was even before they became popular after Mark Cuban bought them and turned them into champions.
Friday night was game time, so I decided to make a quick dinner beforehand. Dinners are always easy when I have something frozen I can just pop in the oven like DiGiorno pizzas. I was at Walmart this week, and they had Rollback prices on DiGiorno pizzas. They are the closest thing to delivery pizza, and at that price, I had to stock up on their Rising Crust pizzas.
I pulled out a Rising Crust Three Meat pizza and a Rising Crust Four Cheese pizza and tried to figure out a way to make it fun so the kids would eat. You know the best way to get kids to eat dinner? Make the meal in a “mini” version. I swear it works every single time. If I make meatloaf, they don’t eat it. If I make “baby” meatloaves in cupcake tins, they can’t get enough. Have you seen those tiny baby banana bunches? Yep, my kids will eat a dozen of those if I let them. Normal-sized bananas? They will rarely touch them. Totally weird, but true.
So, I decided to turn our pizzas into Mini Pizzas. I used my 3-inch biscuit cutter for the job.
There was no way I could cut through a frozen pizza, so I cooked each pizza for 10 minutes. Then, I pulled them out, cut the pizzas with my biscuit cutter. I ended up with 7 mini pizzas out of each pizza, and all that was left was the crust (which my kids never eat). I put them all onto a cookie sheet and baked them for 10 more minutes.
Once the pizza was done, I heated up some pizza dipping sauce. Then, the kids went to town eating their “mini” pizzas. When I was at Walmart buying pizza, I found these cute plastic basketball cups. The kids couldn’t wait to use them for dinner.
Everybody was happy. The kids ate all their pizza, and Nate was especially happy since Dallas won against Phoenix. Woohoo!
