One of the good things about living in Texas is the food. I think it makes up for the undying heat that goes through October. We love us some TexMex.
I make enchiladas on a regular basis, but every once in awhile I like to mix things up and try something new. Nate is all about being adventurous. He loves to try new foods, so I try to do that for him.
Awhile back, I saw a pin of the step by step process to make skillet enchiladas, and I thought my family might just really enjoy that dish. I pinned it to try eventually.
Well, eventually finally came. The other day when every meal I could think of just sounded blah, I decided to pull out the skillet enchilada recipe and adapt it to our tastes. I made my own version of skillet enchiladas — TexMex style! My girls still prefer regular ol’ enchiladas, but Nate and Mr. E both really liked the skillet enchiladas.
TexMex Skillet Enchiladas
Ingredients:
12 corn tortillas
1-2 tsp oil
1 tsp garlic powder
1 tsp onion powder
1 small can mild red enchilada sauce
1 cup of water
2 cups of cheddar cheese
Optional: sour cream
1. Stack the corn enchiladas and cut into small squares.
3. Chop the onion.
4. Remove the tortillas from the pan and set aside.
5. Brown the ground beef and drain. Then, add the onion. (I left the onion out as some of my kids hate it.)
6. On medium heat, add the can of chili to the ground beef and mix into the beef.
7. Add the tortillas back into the mix.
8. Add the can of enchilada sauce and the cup of water. Mix well.
10. Pour into casserole dish and top with last cup of cheese. Optional: Serve with a spoonful of sour cream.
