I can’t wait to show you how to make this one! It’s BBQ Brisket Enchiladas with Tex Mex Gravy. If you love Tex Mex food, you’re gonna love this!
I’m born and raised in Texas, so I grew up on Tex Mex foods. One of the hallmarks of great Tex Mex is enchilada chili gravy. I’ve seen it called enchilada chili or enchilada gravy, too. My favorite dish to order at Tex Mex restaurants is cheese enchiladas and the enchilada gravy is always so good. I’m getting hungry just thinking about it!
If you can make a basic roux and turn it into gravy, then you’ll have no problem whipping this up. And, it’s makes enough that I usually put half of it in a mason jar for the fridge for later — which makes it totally easy to whip out a few tortillas and make some quick and easy enchiladas on the fly.
My enchilada gravy has some special ingredients that I don’t usually see listed in the typical enchilada gravy recipe. Here are my 3 secret ingredients (complete recipe below):
- 1 tsp of sugar
- 1 tsp of bacon grease
- 2 tbs of Farm Rich Smokehouse pulled brisket
My favorite Tex Mex restaurant always puts brisket into their enchilada gravy, so I decided to try it this time with mine. I think it’s the major secret ingredient to making this gravy out of this world! Everyone who has tried these has absolutely loved them.
The hallmark of a good Tex Mex enchilada is the enchilada chili gravy (not enchilada sauce).

- 1/3 cup oil
- 1 tsp bacon grease
- 1/3 cup flour
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 tsp cumin
- 1 1/2 tsp garlic powder
- 1/2 tsp mexican oregano
- 2 tbs chili powder
- 2 1/4 cups chicken broth
- 2 tbs Farm Rich Smokehouse pulled bbq brisket
- On medium heat in a sauce pan add oil and bacon grease.
- Once hot, add the flour and mix until there are no lumps.
- Add the sugar, salt, pepper, cumin, garlic powder, oregano, and chili powder.
- Stir until it starts to boil.
- Turn the heat down to medium low and add the chicken broth.
- Keep stirring until it thickens, and then turn to low.
- Add the brisket and let simmer, stirring occasionally for an additional 15-20 minutes.
- If it gets too thick, add water to thin.
To stuff the enchiladas, I used the Farm Rich Smokehouse pulled beef brisket. It’s already mixed into a sweet and tangy barbecue sauce, which went wonderfully with the gravy. After I make the gravy, I simply steam some corn enchiladas and heat up the brisket in the microwave. Then, I add a couple spoonfuls of brisket to each enchilada, roll them up and place them seam side down in the dish. Then, I pour on the enchilada gravy, top with some cheese, and cover with plastic wrap and cook in the microwave for 3 minutes.
