Down here in Texas, we love our barbecue, and we can be quite snooty about it. If you make it yourself, it can take forever, but the ready made products are usually not up to par. We had barbecue sandwiches with the Double Rubbed Dry Smoked Chicken and the Pulled Beef Brisket from the Farm Rich Smokehouse barbecue line for dinner that night. We enjoyed it so much, I decided this would be perfect for a hassle-free dinner on Halloween before we head out for some trick or treating.
This time I’m going to use the Double Rubbed Dry Smoked Pork and make Smoked Pork BBQ Mini Pizzas. I found mini sized Pita bread – Pittetes – and thought those would be perfect for mini pizzas. See how easy they are to make:
This recipe will take less than 10 minutes, and your family will love it.
- 1 pkg of Double Rubbed Dry Smoked Pork
- 1 pkg of mini pita bread
- 2 oz monterey jack cheese
- thinly sliced onions
- 1 bottle of your favorite bbq sauce
- Follow the directions to heat up the meat.
- Lay out the mini pitas.
- Spread bbq sauce on each pita bread.
- Top with a little cheese.
- Add a spoonful of pork.
- Top with sliced onions and a little more cheese.
- Heat for 1 minute in the microwave.
