Years ago when I first got married my mom let me take my favorite pan from her house. It’s a giant deep dish pizza pan with a removable bottom. I used to make giant cookie pizzas in it as a teenager for friends and boyfriends and even school projects. I made an animal cell from a cookie pizza with all kinds of colored frostings for the organelles. I loved that pan and still do.
That was 20 years ago, and I still have it now and use it quite often. It’s older than me! My parents got married in 1973, and my mom said it was a wedding present to them.
I haven’t been able to find one to replace it all these years later. It’s a big pan, like 16 inches in diameter. I can’t imagine making a cookie cake/pizza without the removable bottom to make it so easy to slide off the pan. Plus, I use just the bottom pan for so many things like rustic fruit tarts like galettes and pizza, too. The only places I see that have a similar one with the removable bottom are available for commercial kitchens that are expensive!
I did see that Amazon had a Wilton deep dish pizza version that is actually a spring form pan that was a bit smaller at 12 inches. I just put it in my cart, and I’ve talked myself into ordering it today. I’ll probably use it as much as I use the big 16-inch size.
Now what to make in that deep dish pan? Well, a few years ago I made these easy peasy Peanut Butter Cookie Brownie Cups. They were a surprisingly big hit on the blog. I love how easy they are, and everyone who tries them loves how delicious they are. Even if you aren’t a baker, you can totally make these with refrigerated cookie dough, brownie mix, and peanut butter cups.
I wanted to turn those PB Cookie Brownie Cups into a dessert pizza with my deep dish pan. Plus, my husband’s team at work recently made their goal, so he told them I would make them some fantastic dessert. Being hugely pregnant, I decided we’d do something easy and this was the perfect time to perfect my PB Cup Brookie Pizza and test it out. My husband’s office is frequently my taste testers.
I greased the pan first, just to make sure nothing was going to stick. Then, I spread a layer of cookie dough down the bottom of the pan.
Next, I covered the cookie dough with peanut butter cups. I spaced them in concentric circles about 1-inch apart.
Lastly, I covered all that with two boxes of brownie mix made according to the directions on the box. I think if you had the 12-inch size pan, one box of brownie mix would be sufficient.
Then, it needs to bake for 30-40 minutes. I started checking at 25 minutes and every 5 minutes after with a knife coming out clean from the brownie batter. With it being so big and thick, ours took closer to the 40 minute mark.
Let it cool completely before serving.
- 1 large package of refrigerated cookie dough
- 2 boxes of brownie mix (follow directions with oil, water, and eggs)
- 24-30 peanut butter cups
- This is for a 16-inch deep dish pizza pan.
- Preheat oven to 350 degrees.
- Spray a deep dish pizza pan with nonstick spray.
- Spread the cookie dough all along the bottom of the pan.
- Unwrap the peanut butter cups and place them in rows of circles all around the cookie dough with about 1-inch of space around each one.
- Make the brownie batter according to the packages.
- Spread the brownie batter all over the peanut butter cups and cookie dough until it's totally covered.
- Bake for 30-40 minutes until a knife comes out clean from the brownie batter.
- Allow to cool completely before cutting into slices.
I love this dessert pizza. It’s gooey and delicious and full of my favorite things – chocolate chip cookies, brownies, and peanut butter cups.
