I have had gastrointestinal (GI) problems my entire life. Even as a child, I would have terrible stomachaches in the mornings before school. When I was 18 years old, I had gallbladder disease, which took more than a year to diagnose as I wasn’t the “right age” to have it. Both my brother and my mom have had digestive issues as well, and my brother was finally diagnosed with Irritable Bowel Syndrome (IBS). My mom suspects she also has it as she has all the symptoms.
Irritable Bowel Syndrome is a serious GI issue that affects the large intestine (colon) and commonly causes cramping, abdominal pain, bloating, gas, diarrhea and constipation, and there is no cure or known cause for IBS. I know I’ve probably developed IBS, too, but I just haven’t had it officially diagnosed. It can be hard to manage it during the holidays because you just never know what ingredients will trigger it.

Recently, I received a cookbook full of IBS friendly recipes by Patsy Catsos, a medical nutrition therapist and registered dietician who focuses on GI issues. I decided to try some out and see if they helped to improve IBS symptoms.
Today I made one of them – Peanut Brittle in the microwave. It’s a fast and easy recipe that’s perfect for gift giving, and a sweet treat you can have even if you’re managing your IBS.

- 1 cup sugar
- 1/2 corn syrup
- 1 1/2 cups oil-roasted, salted peanuts
- 1 teaspoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Combine the sugar and corn syrup and heat for 4 minutes in the microwave.
- Remove and stir in the peanuts. Then, head for an additional 3 minutes.
- Lastly, add the vanilla, butter, and baking soda and heat for 1 more minute.
- Pour out onto an ungreased cookie sheet.
- Allow to harden before breaking into pieces.
I would have never guessed this was an IBS-friendly recipe, and it tasted so good!
