Did you make a New Year’s resolution to get healthy or lose weight? I’m trying to cut the sugar and simple carbs in my diet and add more complex carbs and protein. I’ve found the best way to do that is with little changes to my diet. This way it’s not so hard to make the switch. One way I’m doing this is by incorporating more fruits into my diet like blueberries.
You can do this easily and effortlessly just by leaving a bowl out on the table for snacking. I love to pop a handful of those delicious little blue dynamos into my mouth for a quick snack. Adding blueberries to a recipe is an easy way to add a healthy twist to your meal.
I just love berries of all kinds, but blueberries are one of my absolute favorites. I remember my mom giving me a bowl of warmed up blueberries for dessert when I was a kid, and it was always a delicious treat. I would get down to the bottom of the bowl, and all that was left was a few spoonfuls of blueberry juice — that was always my favorite part. She also made me a meal that’s a bit different which she called a Cottage Cheese Danish, and it’s what I’m sharing with you today!
I’ve made these for myself many times, and other than my mom, no one has ever heard of it. Back in the 70s, long before I was born, my mom successfully lost a lot of weight on a well known diet program. Even to this day, she loves to tout how much she loved the 1970s version of the plan. She still has all the paperwork from it. One of the meals she learned to prepare from it was a Cottage Cheese Danish.
She used to make these for me as a quick meal when I was a kid, and it was always one of my favorites. You can use any kind of fruit on top, but my absolute favorite are blueberries. I love how the blueberries pop when I push a fork into one and the sweet juice gets all over the cottage cheese.
An easy, quick healthy meal full of fruit and protein.

- 2 slices of 45-calorie bread
- 2/3 cup cottage cheese
- 1 tsp cinnamon
- 1/2 tsp sweetener (I like Truvia)
- about 1/4 cup blueberries (fresh or frozen) (other fruits substitute as well)
- I use my toaster oven with the toaster setting for this.
- Line the pan with foil.
- Place two pieces of bread on pan.
- Cover each piece of bread with 1/3 cup of cottage cheese.
- Split the blueberries between the two pieces.
- Sprinkle the sweetener over both pieces.
- Sprinkle cinnamon over both pieces.
- Toast on the toaster setting of the toaster oven for 10 minutes.
- Serve and enjoy!
Now that I’m all grown up, I still make this as a quick meal for myself often for lunch or breakfast. It’s such an easy thing to whip up and the calorie count is great. Did you know 1 cup of blueberries is only 80 calories? For two of these cottage cheese danishes, it’s only about 264 calories total. Here’s the breakdown:
- 2 slices of 45-calorie bread – 90 calories
- 2/3 cup cottage cheese (1/3 cup per slice – 74 calories) – 148 calories
- 1/4 cup blueberries – 20 calories
- 1/2 tsp natural sweetener (Truvia) – 0 calories
- 1 tsp cinnamon – 6 calories
- Total: 264 calories
With a little help from South America, did you know blueberries pretty much stay in season all year-round? So, you can always find juicy fresh blueberries at the grocery store. You can also stock up on frozen blueberries to use when you can’t get to the store to buy fresh. I love making my cottage cheese danishes with frozen blueberries because they burst easier.
Blueberries are also great for providing vitamins and minerals as well as fiber in our diets. One serving is 3.6 g of fiber, and they are a source of vitamin C, vitamin K, and manganese.
