For the first time in forever, I am ready for Christmas! I am done Christmas shopping for all three kids and Nate. While my older two kids were away this weekend, I decided Molly and I were going to do something very Christmas-y and fun. When I was in the 5th grade, I made a graham cracker house at school during the school Christmas party. It’s one of my most vivid memories of elementary school, so I thought it would be totally fun to do it at home.
While I was at Walmart buying all the supplies for our graham cracker houses, I got the best idea! The peanut butter is on the same aisle, and I thought we could make little peanut butter cookie dough truffles into snowmen to go with the houses. So, I grabbed a jar of Skippy peanut butter along with mini chocolate chips and white chocolate melting chips.
While putting our houses together I figured a few things out:
- Saw with the knife as you’re cutting the graham cracker pieces instead of just pushing straight down. The sawing will give you a cleaner edge.
- Don’t worry too much if the pieces don’t fit together perfectly. You can add royal icing to the gaps for “snow,” and it looks great!
- My secret tip to putting the graham cracker houses together is hot glue. We weren’t planning on eating them, and for a preschooler, it’s way less frustrating than using royal icing.
I cut down a cardboard box and covered each piece with foil. Then, we hot glued the houses and added upside down ice cream cones for a Christmas tree to each foil board.
Next, I whipped up a batch of royal icing for the decorations and put it in a frosting bag and just snipped the very teeny tip off. I also filled a muffin tin with all the decorations we’d need. It makes it very convenient while you’re decorating. We put the muffin tin between us and got to work. I found frosted rice cereal squares to be perfect for adding shingles to the roof.

- 2 egg whites
- 1/4 tsp cream of tartar
- 2 1/4 cups powdered sugar
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 cup of Skippy Peanut Butter
- 2 tsp cream (or milk)
- 1 tsp vanilla
- 1 1/4 cups flour
- 1/4 cup crushed Honey Maid Graham Crackers
- 6 oz mini chocolate chips
- Melting chocolates in white and regular
- Beat the egg whites and cream of tartar with an electric mixer until soft peaks form.
- Next, add the powdered sugar 1/2 cup at a time until well combined.
- Once all the sugar is added, beat on high for 5-7 minutes until icing is shiny.
- Transfer to a frosting bag or ziplock bag, snip off the tip and use to decorate.
- Beat butter and sugar until creamy.
- Add peanut butter, vanilla and cream and thoroughly mix.
- Add the flour and crushed graham crackers and beat until mixed in completely.
- Add the chocolate chips and stir until well mixed.
- Make balls and lay out on parchment paper on a cookie sheet.
- Freeze the balls for at least an hour.
- When ready, melt the chocolates and dip balls into each and allow to harden on parchment.
I found two-ball snowmen work best. I put them together with a toothpick and royal icing. We added mini chocolate chips for the buttons and eyes and a little orange sprinkle for the nose (which we made a tiny hole in the face with a toothpick to insert it. Next, we used various candy and royal icing for ear muffs and a scarf. Then, we finished him off with pretzel stick arms with royal icing instead of inserting. (inserting cracked the white chocolate).
With our leftover peanut butter chocolate chip cookie dough balls, we made truffles dipped in white and regular chocolate. They are so delicious! It’s like eating a peanut butter cup. Molly started eating her snowman before we could even get a picture, lol!
I’m definitely making these for Christmas gifts this year. So yummy!
