Are you ready for Fall? Today, it’s a wonderfully rainy day and the temperature has dropped. The high is only supposed to be 70, and I am thrilled! (Seriously, it was about 98 just two days ago). It put me in such a mood to make some Fall Recipes.
Just the other day I was grabbing perfect fall ingredients at Walmart for a day like today. You know everyone always thinks of pumpkin for the fall, but I always think of apples. I could not wait for it to cool down so I could make a batch of mulled cider in the slow cooker. Once every couple of weeks, I put it on in the morning, and it makes the house smell so good.
I decided to make mini chocolate cakes with applesauce to go along with the cider. Then, I swirled caramel buttercream frosting and drizzled caramel sauce over the tops. I finished them off with Candy Apple M&Ms. I picked up some Candy Corn M&Ms, too, and I’m definitely going to do some kind of fun Halloween treat with those. I can’t wait!
When the kids get home from school, they are going to be thrilled. They love the cool weather as much as I do, and they know when cool weather hits I’ll be making something yummy.
Have you ever made mulled cider with apple juice? It’s just so easy to whip up. I usually purchase Mott’s Apple Juice when I make it. One of my favorite things is to top it with whipped cream and a shake or two of cinnamon. I swear it tastes like you’re drinking an apple pie. Here’s how to make it:
Slow Cooker Mulled Apple Cider
- 64 oz bottle Mott’s Apple Juice
- 2 oranges
- 1 lemon
- 1 tsp cinnamon
- 3 cinnamon sticks
- Pour in the apple juice.
- Add the juice of 1 lemon and 1 orange.
- Add the cinnamon.
- Then, mix it up.
- Add the cinnamon sticks.
- Slice up the second orange into rings and throw in the slow cooker.
- Turn the slow cooker on low and it’s ready in a couple of hours and can be served all day.
- Embellish with whipped cream and a dash of cinnamon for an amazing flavor!
These little cakes are perfectly sized for a little treat. The combination of the caramel frosting with caramel drizzle and then the Candy Apple M&Ms is so good together. They smelled so lovely, I had to have one for breakfast. 😉
- 1 chocolate cake mix
- 1 1/4 cups water
- 3 eggs
- 1/2 cup of applesauce
- 2 sticks of butter, softened
- 4-5 tablespoons of heavy whipping cream
- 1-2 tablespoons of caramel sauce
- 4-5 cups powdered sugar
- 1 bag of caramels, unwrapped
- 1-2 tablespoons heavy whipping cream
- Preheat oven to 375.
- Combine ingredients until all are wet.
- Then, turn electric mixer on Medium for 2 minutes.
- Grease the mini swirl pans.
- Fill each one 3/4 full.
- Bake for 15 minutes.
- Allow to cool before frosting.
- Once butter is softened, beat on medium for 2-3 minutes.
- Add 2 cups of powdered sugar and beat on medium.
- While beating, add 2 tablespoons of cream and 1 tablespoon of caramel sauce.
- Scrap the sides down and add 2 more cups of buttercream.
- While beating again, add 2 tablespoons of cream.
- Check consistency before adding more cream or caramel sauce.
- Once consistency is good, beat on high for an additional 5 minutes to get wonderfully light and fluffy frosting.
- Then, swirl into the center of each mini cake.
- Unwrap caramels and add to a microwave safe bowl.
- Add cream.
- Heat at 30 second intervals, stirring after each one.
- When caramel is completely smooth, let it cool for a minute or two before drizzling on frosting and cakes.
