What comes to mind when you think of 4th of July? Fireworks? Picnics? Parades? How about Apple Pie! I’ve spent the last few days perfecting my delicious apple pie recipe. In honor of the 4th of July, Nate’s work is having an apple pie contest today. I’m so nervous!
Update!! I won the contest! I don’t know the prize, but they said my pie was beautiful and delicious! Woohoo!!
They go crazy for my cupcakes, so I’m hoping they love my pie, too. After getting the recipe just right, I baked three pies last night – one for the contest, one for Nate’s potluck lunch, and one for us. My poor neglected children just didn’t think it was fair I wasn’t going to make them a pie, too.
My Cream Cheese Dulce de Leche Apple Pie has a couple of twists from the typical apple pie. Not only is it a mouthful to say, it’s a mouthful of deliciousness, too! It has a bottom layer of sweetened cream cheese, then mixed into the apples is delicious spoonfuls of dulce de leche. Yum yum!
I actually searched Pinterest beforehand, and I could not find a single apple pie layered with cream cheese. That was surprising, but I added it anyway. I wanted something a little different and extra to add for the pie contest.
I also went a little pretty with the top crust of the pie. It looks a little harder to do than it really is. I laid the top crust out flat and cut 2.5-inch circles and layered them on the pie. It came out so nice. I just love the way it looks!
One Pillsbury pie crust works perfect to get the right number of circles if you cut the circles side by side. I found that store brand crusts are not as big as the Pillsbury ones, so you’ll end up rolling out the excess dough to get enough circles.
- 6-7 Granny Smith apples
- 2 pie crusts
- 1½ tsp apple pie spice
- 8 oz. dulce de leche
- 8 oz cream cheese, softened
- ¼ flour
- 3 tbs butter, melted
- ¼ cup sugar + ¼ sugar
- 1 egg
- 2 tsp milk
- Peel the apples. Then, slice the apples ¼ inch thick or less.
- Preheat oven to 425.
- Mix softened cream cheese and ¼ cup sugar.
- Lay out the bottom pie crust into the pie plate. Cut off excess at edges and pinch the crust all the way around.
- Spread the cream cheese into the bottom of the pie crust.
- Mix apples, flour, ¼ cup sugar, apple pie spice, and melted butter.
- Pour apples on top of the cream cheese mixture.
- Drop spoonfuls of dulce de leche all over the apple mixture.
- Lay out second pie crust and cut 2½ inch circles all around the pie crust to layer over the apples.
- Layer the circles overlapping just a bit.
- Mix egg and milk together. Then, brush the egg mixture over the entire pie.
- Next fold end to end 4 pieces of foil and wrap around the pie and fold just down the edges to prevent burning.
- Bake 15 minutes on 425. Then, lower temperature to 350 and bake for 25-30 more minutes, until golden brown.
